Osaka University & Osaka Gas: Academic Cooking, Vol. 51 -- "Marvelous donuts that get rid of poison!? -- Chemical power in oil"

Kaitokudo for the 21st Century and Osaka Gas have jointly been holding a series of unique lectures on certain foods followed by the cooking and eating that food. The 51st "volume" of Academic Cooking will be held on Tuesday, November 25, 2014. KIDA Toshiyuki, Associate Professor, Graduate School of Engineering, Osaka University, will give the lecture. This session is sure to be interesting so don't miss it!

Chocolate, donuts, cookies, french fries… I'd guess there are lots of people who love foods like these made using oils [in one form or another]. Oils (fatty acids) are an indispensable part of our diets as sources of energy and nutrition and also as something making our food more delicious (as a source of "umami"). However, with excess consumption of oils and fats, they become a source of corpulence and lifestyle diseases. This is particularly true if one consumes a large amount of transfats that are produced during the processing and refining of vegetable oils. Because transfats increase the risk of heart diseases from hardening of the arteries, in various countries of Europe and America, regulations have been made regarding such.

In this lecture, Professor Kida, making use of everyday topics about oils and fats, will explain about the latest findings of chemistry, donut-shaped oligosaccharides that remove toxic compounds in transfats and more.

If the number of applicants exceeds the capacity, the successful applicants will be determined by lottery.
Participants will prepare a chef's menu making use of oils and fats: Grilled sardines and egg plant; avocado and scallop salad; baked chocolate donuts.
Participation fee: 2,100 yen (including tax)

Applications by phone will be accepted from Tuesday, October 7. If the number of applicants exceeds the capacity, the successful applicants will be determined by lottery and informed of such beginning from Tuesday, October 28.
