Osaka University & Osaka Gas: Academic Cooking, Vol. 38 -- No Pressure, No, Life

Kaitokudo for the 21st Century and Osaka Gas have jointly been holding a series of unique lectures on a particular food followed by the cooking and eating that food. The 39th "volume" of Academic Cooking will be held on Tuesday, October 24, 2013. SHIMIZU Katsuya, Professor at the Center for Quantum Science and Technology under Extreme Conditions, will give the lecture. This session is sure to be interesting so don't miss it!
Pressure cookers are helpful. They reduce the cooking time and make foods tasty and delicious like magic. Speaking of magic, a vacuum bottle keeps hot drinks hot and cold juice cold. What do a pressure cooker and thermos look like on the inside? Both of these do their magic by manipulating pressure. The pressure cooker uses high pressure, the thermos, low pressure. In this lecture, participants will learn the magic of pressure through pressure cooking by turning familiar ingredients into a delicacy. Not only tasty food, but also getting the right amount of nutrients in one's diet is important. People often talk about getting enough iron or vitamin, but are you aware of the elements in foods? Prof. Shimizu will talk about the latest research regarding elements by using pressure as a key word while taking a look at elements in ordinary foods.

Participants will cook delicious meals using canned foods and dried goods: canned mackerel hamburger with grilled vegetables, rice with hijiki seaweed and canned tuna, tororo seaweed soup, and green tee cheesecake with hardtack.
Participation fee: 2,000 yen (including tax)
