Osaka University & Osaka Gas: Academic Cooking -- Vol. 29: "The Power of Chemistry found in oil -- a curious Doughnut that removes Poison?"

Kaitokudo for the 21st Century and Osaka Gas have jointly been holding a series of unique lectures on a particular food followed by the cooking and eating that food. The 29th "volume" of Academic Cooking will be held on Tuesday, January 29, 2013. KIDA Toshiyuki, Associate Professor at the Graduate School of Engineering, will give the lecture.

Chocolates, doughnuts, cookies, fried potatoes... Lots of people like fried foods and oils and fats are essential foods for life and health, as sources of energy and nutrition, and for giving flavor to complement things we eat. However, consuming too much oil/fat can make one obese and leads to lifestyle-related diseases. Especially trans fat intake is undesirable and strictly limited in countries in Europe and the North America. Consuming a lot of trans fats, which are produced in the processing and refining of vegetable oil, is known to increase the risk of arterial sclerosis and heart diseases.

In this Academic Cooking, the lecturer will speak about oils and fats and advanced chemical technology capable of removing harmful substances such as trans-fatty acids with doughnut-shaped ologosaccharide.

Space is limited to 24.

If more than 24 persons apply, successful applicants will be chosen by lottery.

Intended for: high school students and older

Participants will cook: grilled sardines and eggplants, avocado and scallop salad, and baked chocolate doughnuts. (Low trans fat margarine and baguettes will be served, too.)

Tuition fee: ¥2,000 (including tax)

  • Please note: If the number of applicants exceeds the capacity, the successful applicants will be determined by lottery and informed of such on Tuesday, December 18 by email or postal mail.
