Osaka University & Osaka Gas -- Academic Cooking, Vol. 18: "Your clever but sly mouth"

 When people sit down to eat, rarely if ever do they pay any attention to the movement of their jaw and tongue, how many times they chew their food, or the timing of their swallowing. Although there is the adage "Chew each mouthful 30 times," almost no one does this because --if you actually pay attention and chew something 30 times-- it doesn't taste as good. 

When you put some food into your mouth and begin to eat, it's simply amazing how quickly your mouth analyzes the food for characteristics such as quantity, flavor, temperature, texture, and shape, automatically adjusting the movement of your jaw and tongue as well as the timing of your swallow. Our basic natural inclination is "Enjoy eating as much as you can."

Attend this lecture and discover how slyly clever your mouth actually is!

Intended for: high school students and older

If more than 24 persons apply, successful applicants will be chosen by lottery.

Participants will prepare the following foods: chop suey, cucumber flavored with sesame oil, cooked rice and barley, Chinese soup, a dessert containing nata de coco.

Participation fee: ¥1,500 (sales tax included)

Lecturer: TACHIMURA Takashi, Associate Professor, Graduate School of Dentistry, Osaka University

Brief bio of Associate Professor Tachimura:

Professor Tachimura obtained his doctor's degree in medical dentistry from the Graduate School of Dentistry, Osaka University in 1985, and became an assistant professor in 2007. He is a representative of TOUCH, Team for Oral Unlimited Care and Health, a medical welfare group for oral cavity care and health. He also serves as a part-time lecturer at The University of Tokushima, Nara Medical University, and Osaka Prefecture University. He is involved in treatment and research in speech disorders as well as eating and swallowing disorders of the elderly.
