Osaka University & Osaka Gas: Academic Cooking -- Vol. 16: Basic Spices and Herbs in Vietnamese cooking

Kaitokudo for the 21st Century and Osaka Gas have been jointly holding a series of unique lectures, "Academic Cooking" lectures. These lectures consist of a lecture on a particular food followed by the cooking and eating that food.

The 16th "volume" of Academic Cooking will be held on Friday, January 20, 2012. UCHINO Hana, Specially Appointed Lecturer at the Center for the Study of Communication-Design, will give the lecture.

Do you enjoy spices and herbs -- lemon grass, cinnamon, anise, clove, ginger, garlic, coriander, and nuoc mam? Once you taste spices and herbs, essential parts of Asian dishes, you'll find yourself addicted. The special flavors and colors of these spices stimulate appetite and were originally used as antidotes, sterilizers, and antiseptics.

In this lecture, Ms. UCHINO will speak about essential spices and herbs in popular Vietnamese cuisine. How about learning the history and wisdom of spices and how to fully use them?

Ms. UCHINO, a fan of ao dai, will also speak about Vietnamese life.

Please note: this lecture is a repeat of the Academic Cooking that was held in April, a lecture for which many persons were turned away. Consequently, persons who attended in April are requested to refrain from applying so that persons who were turned away in April will have a better chance of getting a seat this time.

Intended for: high school students and older

If more than 24 persons apply, successful applicants will be chosen by lottery.

Participants will cook Vietnamese dishes, chiken pho, fish in clay pot, boiled cabbage seasoned with fish sauce, and kem xoi.

Participation fee: ¥1,500 (including consumption tax)

Brief Bio of Ms. UCHINO Hana

Ms. Uchino has served as a curator and high school instructor. Most recently, Ms. Uchino became a specially appointed lecturer at the Center for the Study of Communication-Design, Osaka University. Her specialties are the history of Southeast Asian industrial sciences.

As a child, her dream was to be a traditional Japanese confectioner. Fooled into thinking she'd have to become a certified nutritionist in the 9th grade to become such a confectioner, she pursued higher education. Later, worsening food allergies forced her to give up this dream.

Her pastimes are cooking, walking, and an interest in flowers.
