Osaka University & Osaka Gas: Academic Cooking, Vol. 15 -- "What was Exotic?"

Kaitokudo for the 21st Century and Osaka Gas have jointly been holding a series of a new type of lecture, "Academic Cooking" lectures, consisting of a lecture on a special type of food and cooking and eating that food. The 15th "volume" of lectures will be held on Wednesday, December 14, 2011. YAMADA Takashi, a specialist in opera buffa in Naples in the 18th century, will give a lecture.

Since the end of the Middle Age, spices, tea, coffee, china were brought into Europe through seaborne trade. People in Europe were excited with goods from the Orient and their imagination was stirred by visual and acoustic information such as music, stories, and costume catalogs. Thus, exoticism enjoying exotic fantasy was born.

In this lecture, Mr. Yamada will speak about operas in the 18th century, the trends and tastes in those days, Europeans' feelings for the Orient, envy and fear, and their image of the Orient, barbarism and ideals.

How about learning something about the culture of Maghrib in North Africa, in those days to the east of Morocco, through cooking Moroccan food?

Please note: this lecture is a repeat of the Academic Cooking that was held in June, a lecture for which many persons were turned away. Consequently, persons who attended in June are requested to refrain from applying so that persons who were turned away in June will have a better chance of getting a seat this time.

Intended for: high school students and older

If more than 24 persons apply, successful applicants will be chosen by lottery.

Participants will cook Moroccan dishes, dishes cooked in a tajine pot, couscous, salad, and mint tea.

Participation fee: ¥1,500 (including consumption tax)

Brief Bio of Professor Yamada

His specialties are musicology and history of Italian opera. After obtaining a senior diploma in music notation from the Music Academy Bari, he lived in Naples until the spring of 2010 as a fellow at the Music Academy Bari's research center and special fellow of the Japan Society for the Promotion of Science. He has been involved in discovering materials regarding theaters in the 18th century and the resurrection of opera.
